Instructions

1. In a mixing bowl, combine coconut milk, tamarind paste, palm sugar, garlic, coriander powder, cumin powder, turmeric powder, and salt. Stir until well combined.
2. Add the cubed meat to the marinade and mix well until the meat is fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
3. Preheat your grill or broiler to high heat. Thread the marinated meat onto the soaked bamboo skewers, leaving a small space between each piece.
4. Grill or broil the skewered meat for about 3-4 minutes on each side, or until they are fully cooked and slightly charred.
5. While the meat is grilling, prepare the fried coconut flakes. In a pan, heat up some oil over medium heat. Add the grated coconut and salt, and stir until the coconut turns golden brown and crispy.
6. Remove the coconut flakes from the pan and drain them on a paper towel.
7. Once the meat is fully cooked, remove them from the grill or broiler and place them on a serving platter.
8. Sprinkle the fried coconut flakes over the skewered meat and serve hot.
